I would like to share with you a little gem of my mom’s recipe. Coconut sweets are a perfect dessert for summer, very quick and easy to make.
All you need is:
250g Dessicated coconut
Into a mix bowld, add sugar and mascarpone cheese. Stir really well until the ingredients are combined. Finally add the dessicated coconut and amalgamate the creamy mixture.
Shape into bite size balls and roll into extra flaked coconut or bitter cacao.
Refrigerate for a minimum of 2 hours, it's better if you can make this the evening before and let it set overnight. Once set, put each bool into little and coloured paper cups. Enjoy the soft titbit in a bite!
